How do I order a Dome and when will it arrive?
From 7th October 2020, customers can register their interest in the Gozney Dome product. This will put you on a priority list of customers who will be the first to hear about early bird windows and be given the very first opportunity to purchase.

What is included with a Dome?
The Dome features the following as standard with wood-fired units:

Digital thermometer, display unit and batteries 2 x temperature probes for checking the internal temperatures of food items

How much does the Dome weigh?
The oven alone weighs 58kg / 128lb.
In its packaging it weighs 68kg / 128lb.

What assembly is required?
The Dome requires no assembly. Simply manoeuvre the oven onto the Gozney Dome Stand, or your chosen cooking platform using the lifting recesses in the dock. You then insert the flue and connect to your fuel source (when using gas).

What can I cook in the Dome?
The internal cooking floor is sufficiently large to cook a 16” pizza and a small side dish. However, the Dome is capable of producing a vast array of different dishes through a great many different cooking methods. From high temperature steaks or lobster, through to low and slow cooked brisket, the Dome can do it all. Check out our recipe pages for more info.

How long does it take to heat up?
The Dome can operate at a range of temperatures, so it will really depend on what you are cooking and the temperatures you are looking to achieve. The oven could be used in as little as 10 minutes, but will generally be ready to cook Neapolitan pizzas in around 40-45 minutes and will achieve full heat saturation at around 50-55 minutes (850 - 900 degrees F / 450-500 degrees C). Similar heat up times can be experienced with both wood and dual fuel usage.

How long does the product stay hot?
Once up to optimal temperature, the thick stone and dense insulation means that the oven will remain hot for hours without additional fuel. Our testing has shown that the oven will take around 4.5-5 hours to drop from 400c to 100c. This means that joints of meat can be seared in the higher starting temperatures and then cooked low and slow in the residual heat without the necessity for any added fuel source. If longer cook times are required then a stable low temperature can be maintained using wood embers and / or charcoal and regulated via the Airflow Regulation Vent.

What thickness is the stone floor?
The Dome features a 30mm / 1.2” thick cordierite stone floor.

What type of fuel can be used?
Wood Fired:
For wood fire, we recommend using a kiln dried, hardwood kindling in sizes 25 -50mm thick and up to 150mm / 6” long.

Charcoal can also be used in the Dome, although this is generally suited to low and slow cooking techniques.
Dual fuel
When using the gas burner, the required fuel is LPG propane at your applicable local gas pressure. The jets in the gas burner are configured to make allowances for this. A standard sized patio gas bottle is ideal.
A bottle size of 9kg or more is recommended.

Does it work using Natural Gas?
A Natural Gas / Mains Gas option will be available from July 2021.

How much smoke is produced during use?
When using the oven with wood fuel, some smoke will be produced during the early stages of firing. However, once the fire has properly established and some heat is present in the oven, the smoke will diminish significantly.
When firing the oven up using the gas burner, a small amount of soot will be produced when the oven is cold. This will disappear as the product reaches full heat saturation and complete combustion is achieved.

What is the fuel consumption of the Gozney Dome?
Wood:
This will vary slightly depending on your cooking method, but around 3.5kg / 7.5lb of wood will be sufficient for a full heat up to saturation point and a pizza session for an average family.
At max temperatures the oven will use around 2kg per hour.Gas:
The gas burner is rated to 10.0 kW.
A 9kg propane bottle will give around 18 hours use on average. -
Where can the Dome be used?
The oven is suitable for use outdoors, in well ventilated areas, but must be kept under cover during any periods of non-use to prevent the stone from taking on moisture. Gozney offer an accessory to assist with this - the Dome Cover - but any heavy duty waterproof covering will suffice. The Dome is also suitable for indoor use when using the gas burner and using the appropriate canopy extraction in accordance with your local authority regulations and codes.
During use, the Dome and attached Dock must be positioned on top of a non-combustible structure such as concrete, brick or granite. The underside of the Dock will transfer some heat, so materials such as wood and plastic would not be suitable for the oven to be placed on.
If you are not able to use a countertop made from non-combustible material, Gozney also offers a stand that is specifically designed for use in conjunction with the Dome product. The stand also features wheels and wooden wings for plates and utensils. The wings fold away for easy storage during periods of non-use.

Can the Dome be used commercially?
The gas burner features a flame failure device and can be used commercially. If using indoors, it will need appropriate extraction in accordance with your local authority regulations and codes.

What is the Dome made of?
The internal components of the oven are constructed from high grade, 304 Stainless Steel. The outer shell of the oven features a ceramic bonded coating. This means that the oven is suitable for outdoor use year round, but does require a weather proof covering to keep the stone dry during periods of non-use. For added protection and to minimise water ingress during these periods, Gozney offers a weather proof cover accessory - the Dome Cover - although any waterproof cover such as a heavy duty BBQ cover would be sufficient.
The oven also features a 30mm / 1.2” thick cordierite stone floor, plus a ceramic fibre insulation wrap and underfloor calcium silicate insulation.

How do I clean the product?
The oven does not require any internal cleaning as any spilt food debris or soot will burn off during a period of use at high temperature (650oF/350oC +). If any stubborn areas (such as burnt on cheese) are present, a light scrape with a wire brush will help to accelerate the thermal cleaning process.
The outer shell of the oven can be cleaned using warm, soapy water and a damp cloth to remove any small areas of dirt and debris. If the Dome surface is heavily soiled then a non-caustic cleaning product such as Bar Keeper’s Friend can be used.

What other accessories are due to be released for the Gozney Dome?
In its standard form, the Dome is perfectly capable of fulfilling a multitude of roles. However, Gozney have a great number of exciting new accessory releases that will take your cooking capabilities to the next level. The accessories available from launch will be as follows:
Neapolitan Arch - Mechanically fixes to the oven mouth to narrow the aperture of the oven mouth. This increases air temperature proportionally to the rest of the oven and allows for the most authentic Neapolitan style cooking environment. High hydration doughs can be cooked in sub 50 seconds.
Dome Cover - a weather proof cover for storage and protection from the elements
Steam Injector Kit - This kit allows a slow and measured release of water to fall into the steaming reservoir, creating the perfect steam environment for bread baking
Rope Sealed Door - the vented door allows heat to be trapped within the oven chamber, creating the perfect environment for high, medium or low temperature baking or roasting
Dome Stand - features wheels and folding wooden wings for plates and utensils
