Skillet Chocolate Chip Cookie

Ingredients

85g unsalted butter, plus extra for greasing 

85g golden caster sugar  

35g light brown sugar  

1 egg 

0.5 tsp ground cinnamon 

125g plain flour  

0.5 tsp baking powder 

50g chocolate chips 

50g toasted hazelnuts, roughly chopped 

10 large marshmallows  

Pinch of sea salt flakes

Instructions

Prevent your screen from going dark as you follow along.

They’re sweet, gooey and oh-so indulgent. Skillet pan cookies, cooked in Roccbox in under 3 minutes. By winner of Great British Bake Off @candicebrown.

Step 1:

Whip together the butter and both sugars for at least 5 minutes until pale and soft.

Step 2:

Add in the egg and a spoonful of the flour and beat together until smooth.

Step 3:

Add the flour, baking powder and cinnamon and mix until the mixture just about comes together.

Step 4:

Pour in the chocolate chips and hazelnuts and mix through until evenly distributed.

Step 5:

Grease the individual skillet pans with the extra butter or a dash of oil.  

Step 6:

Spoon in a heaped dessert spoonful of the cookie mix and push down, sprinkle with sea salt and top with a marshmallow.

Step 7:

Place into the opening of the Roccbox or Dome and bake for 3 minutes at 300°C/570°F.

Step 8:

Serve and enjoy!
