Apple Cobbler

Apple Cobbler by the one and only @rasheedphilips. An all-time favorite dessert guaranteed to impress, fired up in the Gozney Roccbox.

Ingredients

For the filling

6 large apples, Granny Smith and Golden Delicious, peeled and sliced into chunks

100g / ½ cup granulated sugar

45g / ¼ cup soft brown sugar

1tsp ground cinnamon

¼ tsp ground nutmeg

½ lemon, zested

2tsp lemon juice

2tsp ginger, peeled and grated

2tbsp all-purpose flour

70ml / ¼ cup water


For the cobbler topping

120g / 1cup all-purpose flour

50g / ¼ cup granulated sugar

45g / ¼ cup soft brown sugar

1tsp baking powder

1/2 tsp fine salt

6tbsp unsalted butter, melted

6tbsp milk

1tsp vanilla extract

70ml / ¼ cup boiling water


To finish

Sprinkle of icing sugar

Vanilla ice cream or whipped cream for serving

Step 1:

In a large bowl mix together the sliced apples with the sugars, cinnamon, nutmeg, lemon juice, lemon zest, ginger and flour until well coated.

Step 2:

Heat the Gozney Roccbox, to around 375°F to 400°F / 190°C to 200°C. Heat a cast-iron skillet in the oven.

Step 3:

Transfer the apple mixture to the skillet and arrange in an even layer. Place into the Gozney Roccbox and allow to soften and colour.

Step 4:

For the topping, using a whisk mix the flour, sugars, baking powder, and salt in a mixing bowl.

Step 5:

Pour the butter, milk and vanilla extract into the mix into a loose batter with a wooden spoon, gently folding the batter until it is fully combined.

Step 6:

Pour the topping over the apples, give it a shake to even the topping.

Step 7:

Place the skillet into the Gozney Roccbox. Cook for 25-35 minutes, or until the topping is golden and the apple filling is bubbling. The dome's even heat distribution ensures a perfectly baked cobbler.

Step 8:

Allow the cobbler to cool slightly before serving. This dish is best enjoyed warm, with a scoop of vanilla ice cream or a dollop of whipped cream for added indulgence.

- The Gozney Roccbox provides a unique baking environment, infusing the cobbler with a slight wood-fired aroma that enhances the overall flavor.

- Keep an eye on the cobbler as it bakes; the cooking time might vary slightly depending on the oven’s temperature.

- Using a cast-iron skillet not only is perfect for the Gozney Roccbox but also adds a nice crust to the bottom of the cobbler.
